š„ Roasted Veggies Are the Magic Pill: How to Actually Enjoy Eating More Vegetables
Letās be realāif there was a magic pill for better health, it would be vegetables.
Seriously. If you’re not eating at least 5 servings of veggies a day, start there. Itās one of the simplest, most effective ways to improve your digestion, immunity, energy, and overall well-being.
But⦠letās also be honest. If the only thing you do with vegetables is steam them, youāre missing out on some serious flavor potential. Thatās why today weāre talking about one of my favorite cooking methods that will have you craving veggies: roasting.
š„ Why Roasting Veggies Is a Game-Changer
Whether youāre a beginner or a seasoned veggie lover, roasted vegetables offer a whole new level of flavor, texture, and versatility. Hereās why you should start roasting tonight:
1. Natural Sweetness Comes Out
Roasting caramelizes the natural sugars in veggies, giving them a slightly sweet, crispy edgeāespecially with root vegetables like carrots, sweet potatoes, and beets.
2. Itās Passive, Hands-Off Cooking
Roasting takes a little longer than steaming, but most of the work is hands-off. You can prep while the oven heats up, toss the tray in, and let it do its thing while you cook your protein or just hang out.
3. Itās Flexible and Fast (If You Want It To Be)
Short on time? Chop your veggies smaller to reduce cooking time, or microwave them first, then finish them in the oven for that roasted texture.
4. Flavor Combos Are Endless
Basic olive oil and sea salt is a great go-toābut don’t be afraid to get creative. Try garlic, curry powder, balsamic vinegar, chili flakes, parmesan cheese, or even a drizzle of honey.
5. Fewer Dishes = More Wins
Cover your sheet pan with foil or parchment paper and boomāeasy cleanup. Lazy dishwasher approved!

To make sure your veggies turn out perfectly every time, here are some of my favorite tips:
Use high heat: 400ā450°F is the sweet spot for crispy, golden edges.
Always preheat the oven: This helps the veggies start cooking immediately and evenly.
Use a dark baking sheet: It encourages browning and crispiness.
Donāt overcrowd: Give the veggies space so they roast instead of steam.
Season generously: Salt, pepper, and olive oil are essential. From there, get creative with seasonings!
Add delicate extras (like cheese or honey) at the end: This prevents burning and keeps the flavor sharp.
Toss halfway through roasting: This ensures even cooking and golden edges on all sides.
